Georgia = Khachapuri


Khachapuri is a dish from Georgia. It is a cross between an egg sandwich and a calzone. A calzone is an oven pizza, thrown into the oven, and has it’s roots in Naples. It looks like a folded pizza and is nothing like a round pizza – it looks a bit like a half-moon, and has a salted bread dough.

Typically, a calzone is cooked with salami, ham, mozarella, ricotta and melting cheese, with an egg thrown on top. Sometimes the smaller ones are fried in oilve oil, and this dish from Georgia is no different. Stuffed with cheese, and cooked with an egg and butter, it must absolutely never include tomato sauce – an essential ingredient for one-too-many pizzas.
